I had a LOT of sweet potatoes hanging around the flat after filming the making of a Sweet Potato Pie a couple of weeks ago.  Whose Sweet Potato Pie?  Patti LaBelle’s Sweet Potato Pie of course…  Some of you may know all about the craze for Patti LaBelle’s Sweet Potato Pie, set in motion by this brilliant video…

Warning!  Contains bad language.  But if you don’t mind that, it’s hilarious…

The film is being edited by the lovely Sarah at the moment, I am very excited about it!  I was wearing my jumpsuit – the most LaBelle-esque item of clothing I could find…

I made a chicken and sweet potato curry with some of the left over sweet potatoes (a Diana Henry recipe from A Bird In Hand – one of my very favourite non-movie-star cookbooks):

and these waffles with the rest.  They were SO GOOD and I was very pleased with myself for making them…

These are the first sweet waffles I have made in my waffle making machine.  The only other waffles I have made are the Marilyn Monroe STUFFING WAFFLES – which were ace.

So here’s Fred’s fab recipe – happy waffling…

Oh, and good news, if you don’t eat all of these waffles fresh out of the iron, you can freeze them.  I just reheat them for a few minutes under the grill  and they are almost as good as freshly made….

Fred MacMurray’s Sweet Potato Waffles

1 cup / 200 grams mashed sweet potatoes

1 cup / 135 grams bread flour

1/4 cup / 50 grams sugar

1/2 cup / 115 grams melted butter

1 cup  / 240 ml milk

1 egg, separated

Mix the mashed potatoes, flour, sugar, melted butter and milk.  Then add the egg yolk, beaten until thick and lastly, the egg white beaten stiff.

Grease your waffle maker and when hot put a tablespoon of mixture in each compartment, near centre of iron, cover, and mixture will spread to fill the iron.  If using a non-electric waffle iron, if sufficiently heated, Fred says “it should be turned almost as soon as filled and covered”.

Note: I have an electric waffle maker and I love it!  If you have one of these you probably have a good idea how long waffles take in your machine.  As this was only the second time I’d used my waffle maker, I kept opening it up to see if the waffles were cooked.  It’s a bit of a trial and error thing I guess. 

I have lashings of maple syrup on mine, but they might be nice with just a sprinkling of cinnamon too.  Oh and some fruit for health reasons…
