I had a boyfriend once who could make chips.  Proper chips.  Like you would have here in the UK from a fish and chip shop.  I was always VERY impressed by this.  I have never, ever made chips.  Not even oven chips.  Until now.  Who knew it was so easy to do?  I’m guessing that you could do the same thing with a good old King Edward potato.  It’s yet another cooking revelation for me, all thanks to an old movie star!

Super simple to do, as these were just for me, I just used one sweet potato…  Quite a big ‘un though…

Chop ’em up.

Bake them in the oven with oil and salt

Sprinkle on some cinnamon (?!) and scoff.

I had these with some of William Shatner’s Steak Picado that I found in the frozen archives – it was a SUPER spinster dinner!

Nan Grey’s Shoestring Sweet Potatoes 

3 medium-size sweet potatoes

3/4 cup/75g shortening

1 teaspoon salt

3 tablespoons brown sugar

1/2 teaspoon cinnamon

Preheat oven to 500 degrees F / 260 degrees C / gas mark 10

Wash and peel the potatoes. Slice the, lengthwise and cut into 1/2-inch widths.  Melt shortening in a roasting tin.  When it’s hot enough to brown a 1-inch cube of bread in 30 seconds, add the potatoes.  Sprinkle with salt.  Brown the potatoes for 10 to 12 minutes, turning frequently, in the oven.  Remove from oven; drain off shortening; and sprinkle with the brown sugar and cinnamon.  Return to the oven for 1 to 2 minutes to glaze.

Serves 6.
