Betty Driver’s Salmon Kedgeree

Aw, sad news this week about the passing away of lovely Betty, much beloved maker of Hot Pot at the Rovers Return.  I didn’t have a hot pot recipe from her but I did have a lovely kedgeree one so I made it tonight in her honour.   I would have a had a look to see if I had any of her 78rpms around if I hadn’t been so famished.  I particularly liked Betty’s instructions to serve the kedgeree piled up like a pyramid.  Well I attempted it:

A pyramidical kedgeree.  Great comfort food.
