Charlie Drake’s Liver Casserole

My mind was wandering a bit in a work meeting recently.  It was a chilly and rainy day and suddenly I remembered that there was a block of Charlie Drake’s Liver Casserole in the freezer – hurrah!  The rest of my workday sped by because I knew I’d be hauling it out and sticking it in the microwave for my dinner.

I made this a really long time ago, it was around the time of the Heinz 57 project era, when myself and Mr R were eating our way around 57 Heinz products to celebrate our 57th year on the planet.  I had this recipe in my back pocket, and not being sure if Mr R liked liver (I LOVE IT) I made it for myself and had half of it with a big slab of mashed potato – YUM and popped the other half in the freezer.

The impetus for making this was a wonderful film I discovered many moons ago when I worked for British Pathe. I spent 7 years working with their newsreel collection and there were many treasures. This is really worth a watch, it’s such a brilliant insight into the way Heinz marketed their products in the 1950s.

I’m not sure if Charlie Drake is known much outside the UK, but he was around on TV here in my childhood with his catchphrase, “hello my darlings…”

It’s a little bit of a stretch to name this Charlie Drake’s Liver Casserole, but he’s in the promotional film so I’m taking liberties!  There’s a part 2 of the Heinz film where Margaret demonstrates how to make a Cottage Pie – I have written about that here…

Charlie Drake’s Liver Casserole

3/4 oz dripping or lard
2 small onions
Garlic
1/2 oz plain flour and salt & pepper
3/4 lb liver

Coat liver with seasoned flour then layer with onions then beans then soup.

400℉/200℃ for- 35-40 minutes

DELICIOUS!
