On Saturday morning I needed to fortify myself.  The time had finally come, in my Marie Kondo Festival of Tidying, to tackle the clothes.  Arg. Marie recommends doing the clothes first and leaving sentimental items until last.  But for me, clothes ARE sentimental items, and my flat is inundated with them.  I needed EGGS.

I am learning many things from Greg Swenson’s wonderful book Recipes for Rebels, which contains 200 recipes from friends, family and co-stars of the gorgeous James Dean.

So on Saturday I learned about Matzo Brie, which I’d never heard of in my life before.  As Greg puts it: “This recipe is closer to the traditional Jewish dish Matzo Brie, than an omelet.”  Well after I had this dish proposed by Cloris, I did a little internet rummaging around, and now I really want to try Matzo Brie too.  The omelet was weird, but really good.  So here’s the recipe, and if you want to see the SHAMEFUL state of my clothes hoarding, read on…

Cloris Leachman's Ham and Egg Omelet

Cloris Leachman’s Ham and Egg Omelet With Mushrooms – courtesy of Recipes for Rebels

6 eggs, lightly beaten

2 tablespoons butter or margarine

Add eggs to melted butter or margarine in a heavy skillet.  Allow eggs to become firm on the bottom. 

1 cup bread crumbs

1/4 cup melted shortening

Moisten breadcrumbs with shortening

1 cup cooked ham, diced

1 x 4 oz can of button mushrooms

Add ham, mushrooms, and breadcrumbs to eggs.  Cook until fluffy.  Stir as seldom as possible.  Serves 6 – 8.

NB – I made a version for just me with just two eggs, and scaled down ingredients accordingly.  No mushrooms for me though, as I’m mushroom averse.  It was reeeeeeeeeeeeealy good.

It is a miracle!  I am so pleased I actually knuckled down and did it.  Two big bags of stuff destined for the charity shop.  Two bags of stuff I intend to ebay (but I might reconsider that…) and five things actually thrown away. RADICAL.

My plan is to be able to take off the sign on my bedroom door that says “Do not enter” by January 1st.  I will have Kondo’d everything in my room by then, I hope.
