Daniel J. Travanti’s Chicken Grape Salad

Here’s something from the Drafts Mountain for all you Hill St Blues fans.  I see I was recovering from Covid when I wrote this, and that feels like years ago!

Here we go…

Well, this made a change from just slathering mayonnaise over chicken and calling it chicken salad!

I made this on day one of recovery from Covid. The day I was beginning to get my appetite back and it was tasty. Not in any kind of “I can taste a million different spices and herbs in this” but more in a kind of, “well, this tastes nice” way.

I used about the same amount of grapes as I did chicken. As I was just making it for myself, I used one cooked chicken breast.  This was pulled from the freezer and tasted lemony so I am wracking my brains to think whose movie star recipe resulted in my having a lemony chicken breast in the freezer.  It might have been Roger Moore’s Chicken Luisa I guess…

It felt unusual to be making a sauce for a salad on the hob, but hey ho, this is how the King of Hill Street Blues does it, so I did too.

It’s an interesting way of pimping up some chicken and that standard foodstuff for convalescents – grapes.  My tip would be, to just add enough of the sauce to moisten the chicken-grape mixture.  You might not need it all…
