Recipe of the Month – Deanna Durbin’s Santa Monica Dressing

It’s salad time here in the UK.  It’s like a bakehouse in my flat as there is scaffolding all over my building which means I have to keep the windows closed.  I cannot think of cooking a thing, so Deanna’s dressing is adorning a vast amount of saladings this week.

It is the kind of creamy salad dressing that, if you are a fan of thousand island dressing (which I definitely am), you’ll be scoffing by the spoonful.

Deanna Durbin’s Santa Monica Dressing

1/2 tablespoon chopped pimento*

salt and pepper

1/2 teaspoon paprika

1/2 tablespoon onions, chopped fine

1/2 cup of mayonnaise

1/2 cup catsup [ketchup]

2 tablespoons chili sauce

1/2 teaspoon tarragon vinegar

1 hard-boiled egg, chopped

1/2 cup thick whipped cream

Mix ingredients well in order listed, and add the 1/2 cup whipped cream.

NB – the placing of the salt and pepper in this list of ingredients seems odd, considering Deanna is very specific about mixing the ingredients in this order.  But I forgot the salt and pepper so maybe she has a point…

* Pimentos aren’t easy to get in the UK so I use red peppers.
