This is the kind of recipe you can take with you to an island that is 3 miles long and 5/8 mile wide and easily rustle it up for 5 hungry hikers.
I’m just back from a glorious holiday on Lundy Island where I was seduced into the wonderful world of bird watching. I had no idea there was so much pleasure to be had from sitting in a deckchair with a blanket over my knees and binoculars to my face for hours. I loved it!
I saw a LOT of birds through my binos, but I was most proud of my Peregrine Falcon spot, my Skylark spot and TWO PUFFINS! Surely the cutest of all birds?
One of the five of us human Puffins is a vegetarian so I made 2 x Dick’s recipe, one using bacon and one using vegan bacon. It worked! So if you fancy this but don’t eat bacon – get yourself some of this or something similar.
Veggie version
Version with pancetta
So good! You could make this vegan by using plant-based milk as well as the vegan bacon.
I also made Jane Asher’s Chocolate Trifle because I LOVE IT. The recipe for this one is in the previous post which you can find here.
This time I popped some whipped cream on top.
Mmmmmm!

Love that a Corn Chowder recipe starts with Bacon ! But I do love a chowder and Dick Powell . But can’t see anything wrong with this, vegan or not . Love the combination of flavours and the creaminess the milk gives. Want some now ! And strangely enough I’ve been doing a bit of bird watching myself, an eco-park I visited a while back in Cody Dock on the River Lea nr. Canning Town is doing a bird survey and every friday morning we walk the same stretch of the River Lea at the same time and record the bird life we see. Certainly no twitcher me, but a lovely way to take a walk of morning and a good way to work up an appetite for chowder !
Well that sounds absolutely lovely, Mark. I now totally understand the pleasure to be had from bird spotting. I am getting myself some binoculars! Do give Dick’s soup a whirl, it’s delicious.
I’m so jealous of your puffins!
And of the corn chowder. It’s good, isn’t it! I have so many soups to get to before the hot weather comes, I don’t know if I can fit another round of it in to my plans, but this post is a good reminder I should try!
I was SO EXCITED to see them, VT! It was on the very last afternoon of the holiday so I was well chuffed. That chowder is GOOD. Put it on your long-list…
