Have you ever made mayonnaise, your very own self?  I never had, until I tried making the mayonnaise to the recipe that Elizabeth Taylor champions in her marvelous book, Elizabeth Takes Off.

There will be more, much, much more about what Elizabeth Taylor liked to eat, in my next EatDrinkFilms column and I’ll try to remember to link back to it here, when it goes live.  But for now, here’s Elizabeth’s recipe for a diet friendly, delicious chicken salad recipe.  This recipe is best made with the mayo in Elizabeth’s book, the recipe for which will be in the EatDrinkFilms column.  You can either make this recipe by doctoring your shop bought mayo as detailed below, or if you wish to be true to Liz, you could wait for the column, buy the book on ebay (I do recommend it), or email me via the contact page and I’ll happily send the recipe.

Curried Mayonnaise

8 oz / 225g low fat mayonnaise

2 teaspoons curry powder

1 teaspoon apricot jam

Juice of 1/2 lime or lemon

Combine ingredients and stir to mix thoroughly.

Elizabeth Taylor’s Curried Chicken Salad – serves 1*

6 oz / 170g chicken breast, broiled or stewed, skin removed

1/2 crisp, green apple, chunked

2 ribs celery, chopped

1 and 1/2 tablespoons, or enough to coat salad, curried mayonnaise

ripe mango (optional)

Slice chicken breast into thin strips.  Toss with apple, celery and mayonnaise.  Garnish with sliced, ripe mango if desired.

There was a hint of the Coronation Chicken about this dish.  I loved it.  Thanks Liz!

* although Liz said this served one, it was a hefty portion so I ate some for my dinner and kept some for lunch next day.
