Gene Tierney’s Tuna Salad Royal

When I opened my box of tomatoes from the Isle of Wight and I saw the BIGGUN

I knew exactly what I was going to do with it…

But when I actually started constructing this most spectacular of working-from-home-lunches I reealised that this tomato was so massive, there was no way I could eat it all in one go.  So I did a little kitchen hack and made it into a sort of SANDWICH with two slices rather than a TOWER!

Haha!  Delicious and such a simple thing to do with 4 ingredients for the inside bit.

Gene Tierney’s Tuna Salad Royal

In a salad bowl combine 1 can Star-Kist Tuna, 2 tablespoons sweet pickle, 1/2 cup chopped celery.

Add 1 tablespoon lemon juice to 1/4 cup Kraft Mayonnaise and toss together with tuna mixture, season to taste.

For each portion, place lettuce on a salad plate and cut a peeled tomato into three crosswise slices.

Starting with a slice of tomato placed on the lettuce, alternate tuna salad with remaining slices.

Garnish with mayonnaise and watercress as shown.

A leaning tower of tuna?  Why not?!
