I have a Vincent Price Quiche Lorraine in the oven and as this involves a large amount of bacon which provides a large amount of bacon fat I thought I’d have Joan’s spinach salad alongside. It’s hot bacon fat mixed with vinegar that makes her salad wilted. Mmmmmm…..
I know that I shouldn’t praise my own cooking but from what I can see through my glass oven door, the quiche is a triumph. It is fluffing up loud and proud and if it doesn’t flop when it comes out it will make a pretty picture over at the Vincentennial Cookblog.
Wish there was someone here to share it. It’s not going to do my diet much good to have a massive cream based snacking quiche around the house for the next few days. However, I shall kid myself the spinach salad is healthy, despite being cloaked in bacon fat.

Your cooking is triumphant so you should praise it. And Joan’s salad has spinach–and in her age, people considered bacon a healthy food. And quiche does have a lot of protein, right?
