Shirley Jones’ Mexicali Corn Casserole

This recipe was part of a batch of cards that the wonderful Yinzerella of Dinner is Served, 1972 sent over to me many moons ago.

It mysteriously appeared on the floor of my writing room a couple of weeks ago, separated from the rest of the cards.  I took this as a sign that Shirley wanted me to cook it.

No food mixer is required!

I made this once before when another lovely food blogger Taryn of Retro Food For Modern Times was visiting from Australia.  Here it is on the right

I remembered it being really tasty, so I was keen to give it another whirl.  The main ingredient is this…

which isn’t available in supermarkets here in the UK, so I had to get some off the internet.  The smallest package available was 4 boxes so there will be more of this delicious corny treat in my future for sure.

Highly recommended, especially if corn muffin mix is easy to come by where you are.
