It’s a big no-no to play two tracks featuring the same artist back-to-back. Glenn Miller and His Orchestra followed by Glenn Miller and His Orchestra? Never! I have the same rule here at Silver Screen Suppers: no Vincent Price recipes followed by another Vincent Price recipe… But following a zucchini omelet with a zucchini frittata? I am allowing myself to do it because…

I used the second half of the same zucchini!

What is the difference between an omelet and a frittata?
- Omelet: Uses high heat; cooks in minutes; folded in half before serving.
- Frittata: Uses low heat; cooks on the stove first; finishes under a broiler to set the top.
Or in Suzanne’s case, a lid goes on top of your pan to set the top.

I also read online that a frittata is served flat rather than folded, but I didn’t have room for that on my plate, so I guess mine was a combo—an omelettata? A frittelet? Whatever, it was delicious.

As I mentioned in the Ruth Gordon post, I think something magical happens when you let the courgette colour slightly before adding the eggs.

I didn’t have any Parmesan, but I did have feta. I don’t think Suzanne would mind…
I reckon this recipe would serve 6. I just did 2 eggs and half a zucchini for me, myself and I.
