Tessie O’Shea’s Egg Juice

It’s not a very appetising recipe title is it?

At the beginning of this year, I pledged to make one thing a month from the Tessie O’Shea Slimming Cookbook

and I am a bit behind, so expect TWO slightly weird dishes from Tessie’s 1970s kitchen this month.

Hoorah!

Chapter 3 of Tessie’s book is entitled Dressings and Sauces and I love this pic.

I might get myself a chef’s hat and pose like Tessie in the kitchen with my ukulele…

I admit that I chose this recipe from Tessie’s array of diet dressings and sauces purely because of its name. Like her Butt-Chive Cheese Shrimp recipe title, it just tickles me. Egg Juice. Haha!

It’s very simple to make, but beware, it makes quite a lot of Egg Juice so unless you are feeding a crowd you might want to divide the recipe down.

I served it squiggled on top of some smoked, peppered mackerel and I liked it. But goodness knows what I’ll do with the rest of it…

  1. I was amused enough by the recipe (egg yolk…V8…mayo? each ingredient as much of a non sequitur as the last), but the Vincent Price photo at the end got an actual guffaw out of me. A toast of metaphorical egg juice in your honor!
