Tony says: “When I was a kid in New York, my closest friends were Irish and Italian and we shared everything, even holidays. So I figured I might as well get into the act and always asked Mom to whip up her stuffed cabbage, my favourite then, and my favourite still.”
Well, I made Tony’s recipe, EXACTLY to his specifications (the only difference being I used goose fat instead of chicken fat) and it was a bit grim. It wasn’t very photogenic and I didn’t really dig it but Ben ate TWO and said he liked them (I think he was being polite). Still, when I once asked Ben if there was anything he didn’t eat he said, “I eat everything except metal”.
I have three of these weird cabbage packages left so I guess they will be my lunch for three days until I go to AMSTERDAM!
His recipe is Kosher. He is a Hebrew.
