Yul Brynner’s Apple and Walnut Cake – My Top 100 Movie Star Recipes #91

It’s Yul Brynner’s heavenly birthday today, and here’s a post that’s been in my draft folder for ages. Happy birthday, Yul, my heavenly heartthrob…

I recently did a bookbinding evening class here in Hastings, and I LOVED IT.  The first four weeks of the course involved learning about the many and varied book structures that exist.  I’ve made some fabulous notebooks and learned lots of new techniques.

In the second four weeks, we worked on our own small publications.  I chose the dos-à-dos as the structure I’ll be using.  Here’s a sneaky peek at the very first prototype of something I am provisionally calling The Agatha Christie Supper Club Book – it’s a recipe book for 2 movies based on Agatha Christie novels – Death on the Nile and Murder on the Orient Express.  I will probably have a handful of these to sell in a month or so – collector’s items!

Fraser, who is the master craftsman who teaches the class, was paid for a job in carrots, quinces and apples on the day of one of our classes.  Don’t you love that?  He had a big box of cooking apples for us to help ourselves to, and I made a Yul Brynner Apple and Walnut Cake to take to class.

Apple for the teacher?!  Another member of the class, Kerry, made some fabulous Florentines, so we were all on a sugar high with scalpels in our hands!

Yul’s cake is such a breeze to make and always turns out perfectly, so I’ve decided to include it in my Top 100 Movie Star Recipes. It lasts for ages, and if you make the whole recipe, it would serve about 17 people, I reckon – it did last time I made it!

You will definitely need a tube pan if you make the whole amount; it’s a massive amount of mixture, and this means you won’t get a soggy middle to your cake.  I couldn’t find mine this time, so I halved the recipe and used a smaller cake tin – 10 inches in diameter.  Here’s the recipe, complete with buttery fingermarks and “have I put this in yet?” ticks.

In my oven, 45 minutes was perfect for the top to be nicely browned. I would check around 40 minutes or so in case your oven runs hotter.  The recipe is from Yul’s VERY EXCELLENT cookbook.
