I wasn’t sure if I would like this dish, but I did. It is weird, but good! Jack is best remembered by me as the dapper gent starring in Hawai Five-0
and as I have written about this series in the Cooking the Detective book I wanted to try Jack’s Island-Style Chicken.
I know that Joan Crawford would have something to say about three elements on the same plate of similar colour (AWFUL is what she would say) but it tasted much better than it looks!
What a claim to fame, “A lucky actor who has managed to combine the ideal life and work.” I might be able to do that myself if I lived in Hawaii!

It sounds like it might make a better soup? Eliminate the bean sprouts and use peas or diced red bell peppers and more liquid….. Food from Hawaii usually by some culinary law seems to demand the use of pineapple, which is totally missing. (I can’t see how that would add to this dish.)
Ooh Sally, yes, I like this idea! It’s strange – when I read the recipe I wondered if I would like the dish and I was surprised that I did. It’s unusual (certainly to a British palate) but strangely delicious!
