John Wayne’s Cheese Casserole

Hmm.  Thanks for that Duke!

Well the clue should have been in the title of the dish – but that was VERY, VERY  cheesy.  As someone who hasn’t eaten much cheese for about 5 years this was one hell of a shock to the system!  There wasn’t much in it apart from CHEESE.

Jeanne in the US of A test cooked this a while ago for us and gave it the thumbs up, she preferred to leave out the tomatoes (saving them for a Bloody Mary on the side) but I put some on top anyhow – see photo on the flicker site which should be there tomorrow.

I agree with Jeanne that it was absolutely delicious but it was a bit like having a fondue where next day you feel like your whole body is entirely made of cheese.  And now I’m thinking of the Mighty Boosh song, “Cheese is a kind of meat, a tasty kind of beef” well yes, maybe.

So the Duke’s casserole is GOOD but so rich that you can only really eat a tiny bit.  I just made half of the quantity he suggests as I’m having a spinster’s night in and there are probably 3 more portions left.  Oh LORD.  I am going to be very, very fat.  Thank GOD I went on TV pre – and not post – John Wayne’s Cheese Casserole.
