I had some cooked chicken hanging around the place before I moved house, and this looked like a good way of using it up.  What a nice surprise it was when this “doesn’t look much on paper” recipe turned out to be absolutely scrumptious. Bravo Rock!

It’s not a very photogenic dish, so you might not want to serve it at a fancy dinner party, but as I was just making this for me, myself and I, who cares?  I made half the recipe and had it across two work nights.  Delicious.

I’m gonna put this one in the Cooking the Detectives book alongside Susan Saint James’ Barley Casserole.  McMillan and Wife – done and dusted!

STOP PRESS!  My film archivist chum Margie in Atlanta made this and her feedback was, “It definitely needed more salt, which I added afterwards, and I think it could use some parmesan cheese in with the breadcrumb topping.”  Oooh, yes, please!
