On a Spinster’s Sunday there must be eggs too… So here is what I had for my breakfast today. Mmmmm – beans, eggs, bacon (well ham this time…) all in a fluffy package.
I’ve written about the Diana Dors diet here before, it’s such a genius multi-media plan and I love it. I might make an effort to actually try and follow it for a while in June when I get back from my holiday.
So here’s the recipe – 240 calories per serving. Highly recommended. I usually add a bit of Worcestershire sauce and chili sauce to my beans.
Diana Dors Breakfast Bean Omelette
2 eggs, size 4
2 tablespoons water
1 rasher streaky bacon, rind removed and chopped
2 oz (50g) baked beans in tomato sauce, warmed
Beat the eggs with the water and salt and pepper to taste. Fry the bacon in a non-stick omelette pan until crispy. Add the egg mixture and, using a fork, stir the mixture over a high heat until almost cooked.
When the omelette is almost set, spoon the beans on one side of the omelette. Fold the remaining half over the beans to seal. Transfer to a warmed plate to serve.
Maybe with a cup of tea and some bread and butter?!
I will have to check that diet out–I love any diet that allows bacon (as most of the good ones do–it’s my beloved carbs not protein that cause weight gain). Hope you had a great spinster’s weekend!
There are a lot of dishes that involve GELATINE in Diana’s diet book. But lots of low-carb recipes for sure. I’ll be trying out a few in June and will report back.

Thank you–right now I’m practically living off steak or salmon with rocket and avocado salads, beef stew and eggs! I need to add a little more variety to my meals.
